Appetizers with sun-dried tomatoes

Some appetizer recipes featuring sun-dried tomatoes and feta cheese:

Zucchini Rolls with Feta and Sun-Dried Tomatoes

Ingredients: 

  • 2 medium zucchinis
  • 100 g feta cheese
  • 8-10 Family Harverst™ sun-dried tomatoes
  • 1 clove of garlic
  • Olive oil
  • Fresh basil
  • Salt and pepper to taste

Preparation:

  1. Slice the zucchini into thin rounds using a vegetable peeler or knife.
  2. Sauté the zucchini slices in olive oil for 1-2 minutes on each side.
  3. Combine the feta, finely chopped sun-dried tomatoes, minced garlic, and some olive oil until creamy.
  4. Spread the mixture on each zucchini slice and roll them up. Secure with a skewer.
  5. Garnish with fresh basil and serve.

Feta, Sun-Dried Tomato, and Pesto Sandwiches

Ingredients:

  • Baguette or ciabatta bread
  • 150 g feta cheese
  • 8-10 Family Harverst™ sun-dried tomatoes
  • 2 tbsp. pesto
  • Olive oil
  • Arugula or other greens

Preparation:

  1. Slice the baguette and lightly toast the pieces in a frying pan or toaster.
  2. Spread pesto on each toasted slice.
  3. Layer with a slice of feta, sun-dried tomato, and a few arugula leaves.
  4. Drizzle with olive oil before serving.
