Bulgur cakes with cottage cheese and blueberries

This healthy sandwich is ideal for breakfast and as a snack. You will certainly enjoy the combination of crispy and fragrant bulgur cake with tender cheese, fruits and blueberries. In addition, there are only 28 calories in one rice cake!

Ingredients:

  • Ricotta cheese or soft cottage cheese – 1/2 cup
  • Apricot jam – 2 tsp
  • Family Harvest™ Bulgur cakes – 4 pcs
  • Fresh fruit to choose from: apple, pear, nectarine or peach thinly sliced – 1 cup
  • Fresh blueberries – 1 cup
  • Cinnamon – optional

Directions:

  1. In a small bowl, mix cottage cheese and apricot jam.
  2. Evenly distribute the mix on top of all Family Harvest™ bulgur cakes.
  3. Top with fruit slices, sprinkle with cinnamon.
  4. Put 1/4 cup of blueberries on top of each sandwich.
