Ricotta cheese or soft cottage cheese – 1/2 cup Apricot jam – 2 tsp. Family Harvest™ rice cakes (flaxseed) – 4 pcs. Fresh fruit to choose from: apple, pear, nectarine or peach thinly sliced – 1 cup Fresh blueberries- 1 cup Cinnamon – optional
1. In a small bowl, mix cottage cheese and apricot jam.
2. Evenly distribute the mix on top of all Family Harvest™ flaxseed rice cakes.
3. Top with fruit slices, sprinkle with cinnamon.
4. Put 1/4 cup of blueberries on top of each sandwich.
